This is so easy, and you get protein, calcium, and lots vitamins from the fresh fruit!
Mix 1 part creamy peanut butter and 1 part low fat vanilla yogurt until smooth. Serve with apples and bananas. Yum!
PS, I'm on hiatus from vegetarianism. It's REALLY, really hard to get enough protein when you're on the go as much as I am. Hopefully I'll get back to it next year!
I guess we have to root for Duke now

You've come a long way, baby
I can't believe how different our lives are from last year. Last year at this time we were sitting at Duke, waiting for tests and praying our brains out that Jon would make it through.
Well, he did, and he did more than just make it through. He bikes all over the place, refuses to drive the garbage to the compactor a half mile away (he prefers to walk, garbage bags and all), and he is typically the one convincing me to take the dog for an extra long walk. Not to mention we bought a house, I started school, and we found out that we are going to embark on our biggest adventure yet...
We've come a long way, baby!
PS yes I still plan to finish my Masters. Those diapers aren't going to pay for themselves.

Incredulous
I got a 97% on my final paper and a 90% for the class overall.
I honestly have no words.
****
I just realize that I've somehow managed to maintain my 4.0 GPA.

musings from the library downtown
awesome: listening to the kids from the homeless shelter have singing and story time
awkward: the 80 year old woman wandering around the library wearing leggings and a neon green fanny pack

better for you chick {pea} salad sandwiches
Compared to chicken salad sandwiches, this is better for your health, better for your budget (chickpeas are 50 cents a can), and of course better for chickens. I served it with naan, but you can put it in a wrap, on plain bread, in a pita... whatever. I made a double batch and plan on eating the leftovers for lunch during the week.
This recipe courtesy allrecipes.com
- 1 (19 ounce) can garbanzo beans, drained and rinsed
- 1 stalk celery, chopped
- 1/2 onion, chopped
- 1 tablespoon mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon dried dill weed
- salt and pepper to taste
